The restaurant uses heavy timber from the fires at Yellowstone National Park, as well as weathered wood from snow fences from Wyoming. Columns are constructed with stone mined from a quarry in Pueblo, CO. The décor includes a large, stuffed bear. Many of the themes are taken from Kroenke's sprawling Q Creek Ranch in Wyoming.
The restaurant on the southeast part of the stadium is being built where administrative offices once stood, as Kroenke, who lives in Missouri, thought it was ridiculous to waste prime real estate on executive offices.
The restaurant is primarily aimed at fans that attend more than 200 events a year at the Pepsi Center. Eventually, the restaurant hopes to be open every day for lunch and dinner. Menu items range from $9 to $33. Much of the fare has a Western flair.
Levy Restaurants, which operates restaurants across the country, will run the Blue Sky Grill. Levy Restaurants also operates the Ridgeline restaurant on the Pepsi Center's club level. Levy operates restaurants across the country, including Spiaggia in Chicago.
