The company currently has locations in downtown Chicago, Philadelphia and on the campus of Arizona State University in Tempe, AZ. The sites range from 200 sf at the college to about 1,200 sf at 100 S. Wacker in Chicago. However, the new store in Evanston, in the new Sherman Plaza retail development at 1622 Sherman Ave., will be about 2,400 sf, says company officials. The Plaza will be 25-story building will hold 253 condominiums, lofts, and penthouse residences, a garage with 1,585 spaces, and 152,000 sf of retail space.
David Roth, chairman, chief executive officer and founder of the company, says the Evanston restaurant will be used as a training ground for future franchises. He says the company has contracts for 31 new franchises, which will include a site near Penn State at State College, PA. The new franchises will start coming online in January, Roth says.
The firm also plans on adding nine company-owned restaurants, says a company spokeswoman. She says another company concept will be a traveling restaurant in the form of the Cereal Sprinter, with a breakfast delivery system similar to an ice cream truck, that can show up at sporting events or transportation hubs.
