GILBERT, AZ-The Phoenix Business Journal reports that Over Easy, which opened in Phoenix at the start of the Great Recession, has thrived to the point that it's now opened shop in two locations. The breakfast restaurant is feeding diners in Gilbert and Mesa, AZ.
In Gilbert, the restaurant is open for business at 211 E. Warner Rd., while in Mesa, diners can congregate at 6451 E. Southern Ave. According to the article, the Over Easy concept was developed by the father-son team of Brad and Aaron May, and opened in Phoenix's Arcadia neighborhood on Dec. 31, 2007. A year later, they took the concept to North Scottsdale.
Since the initial opening, Aaron May says customers have been clamoring for Over Easy restaurants in the East Valley. Each Over Easy is about 2,000 square feet and cost a few hundred thousand dollars to open, May adds.
