PORTLAND-A Mexican Restaurant chain out of California this week said it is planning to open eight restaurants serving grilled Mexican cuisine. Rubio’s Restaurants, based in Carlsbad, CA, is working with Auburn, WA-based franchiser S&A Enterprises to develop Rubio’s Baja Grill restaurants throughout the region.

The Rubio’s company now operates 124 restaurants. The new stores, for which an opening date has not been established, would be the first north of California. A spokesman compared the restaurant’s style to the Macheezmo Mouse chain.
